I have something delicious for you to do with all that extra watermelon you have in your fridge! I really love watermelon and am excited to see it in every supermarket I go in these hot summer days, but sometimes you just can’t eat it ALL. And if you try to buy the little mini ones, they cost more than the big ones! So you usually just suck it up and pack that 20 pounder out to the car. Well, here is an option that you and your kids are sure to love. It only takes minutes to whip up this creamy fruity treat and it’s sugar free so you can eat it guilt free, too! To keep in line with the simpleness of my other frozen drinks, Peach Lemonade Ice and Mango Lime Ice, there are only 4 ingredients in this not counting the ice. So break out your blender and lets getting mixing!
Add your ice, watermelon, lemon juice, coconut milk, and stevia into a high powered blender and let it go until its smooth and creamy. Super hard instructions, I know, but with time, I think you will get it! 😉
Now this tends to melt fast, so don’t take too much time to slurp it down! But I don’t think you will have a problem with that. 🙂 Is it just me or does coconut milk just make everything better?!
- 1 cup diced watermelon
- 1/4 C light coconut milk, canned
- juice of 1 lemon
- squirt of liquid Stevia or more to taste
- 2 C ice
- Add all ingredients to a high powered blender and blend until completely smooth and creamy.
- Eat right away!
