I know this sounds cliche, but I’m pretty sure that this is the BEST salad I have ever tasted. There, I said it. And I mean it, too! I love this flavor combination and the dressing is, well, amazing! Crunchy almonds and tangy blue cheese on top of sweet peaches and berries, with a tangy almond butter dressing drizzled over it all. You need to try this.
I make this salad very regularly to take with me for work. I’m sure you have seen the salad in a jar method on Pinterest. It works really well with this salad. I make 3 or 4 jars of it at a time and just grab one each morning. With this one, I like to keep the dressing in a small separate container and pour in on when I’m ready to eat. I just open the jar, turn it over and dump it out on a paper plate, then pour the dressing on. Because of the way you layer the ingredients in the jar, nothing gets soggy, and it pretty much builds itself when you dump it out. Genius.
To layer this in a jar, start by adding your grilled chicken, cut in pieces, almond slivers, blue cheese, red onions, red peppers, blue berries, peaches, then spinach in that order. You can pack the spinach in there pretty tight at the end to get it all in.
Whisk up your dressing ingredients in a small mixing bowl until smooth and runny. Store in a airtight container in the fridge until you are ready to use it. This dressing recipe makes 4 servings, so sometimes I just measure it out into 4 small containers so they are ready to go.
If you are just eating this salad for dinner or right away, just build the salad the opposite way than how I told you to put it in the jar, with the spinach first. So simple and easy! You will look forward to lunch with this salad prepped in your fridge! It would also be a great salad to serve at a lunch party or get together. It looks so impressive, but so easy. 🙂

- 1 T honey
- 2 T water
- 1/8 t chili powder
