Let me introduce to you my most favorite fruit ever…. the Mango! Ever since I served an LDS mission in Ecuador 15 years ago, I am head over heels for a good mango. I would almost consider myself almost a mango snob if you will :). In Ecuador, there were mango trees everywhere. People grew them in their yards, like we grow apple and peach trees, along with more bananas than you could shake a stick at of course. And they were huge. I mean really huge. We are talking nerf football sized gems. They were so sweet and juicy. Man I miss those mangoes.
A lot of times when I go to the store, I look at the sticker on the mango to see where it came from. More often than not, the ones we get around here, are from Mexico. Not that there is anything wrong with mangoes from Mexico, but sadly, for me, they don’t quite compare. Don’t worry, though, I can be a big girl and get over it and enjoy a mango from anywhere. But just fyi, mangoes are in season down there during our winter, so if you happen to find a mango in January from Ecuador, give it a go. 🙂
Ok, enough about my obsession with mangoes. I love that the title of this recipe has the 3 out of the 4 ingredients needed to make this deliciously healthy treat. And no added sugar!!! Nope, just my good old friend stevia to sweeten things up a bit. All you need is a good ripe mango, a medium sized lime, ice, and some stevia. You will be amazed and how creamy and smooth this comes out! Seriously, I could eat this everyday, and make annoying mmmmmm noises the whole time, every time. 🙂
In your high powered blender, add about 1 1/2 cups of ice, half a mango (peeled and diced up), one whole lime with the rind cut off, and a good squirt of liquid stevia (or 1 tsp or so of granulated stevia).
Hit the blend button and let it go for a bit until smooth and creamy. So incredibly easy and my kids think it’s as good as going to buy one at Jamba. And the fact that it’s so fresh and healthy is just an added bonus. I have also made it with added berries and it’s equally amazing.
- 1/2 ripe mango, peeled and diced (about 120 g)
- 1 medium lime, rind cut off and quartered
- about 1 1/2 C ice
- 1 good squirt of liquid stevia to taste (or about 1 tsp granulated stevia)
- Layer ingredients in a high powered blender. Secure the top, and blend until smooth and creamy.
- Macros: Calories 98; Fat 0.6; Carbs 27.5; Protein 1
- If your blender won't blend straight ice, you can try adding some fruit juice, or almond milk even.
