Some nights you need something fast, easy, AND healthy and that’s not always an easy option to find. My kids have never been big on soup which bums me out, because I love soup! But I will say that they even get excited about taco soup. Maybe it’s just because it says “taco” but I like to think it’s because they think it’s so delicious. 🙂
This soup has a “secret ingredient.” If I put a bunch of veggies in the soup, my kids would surely refuse to eat it, so I just use some V8 juice as part of the base and they don’t know any different! Plus it gives it a yummy twist in the taste instead of just plain tomato sauce.
Start with browning your ground turkey in your big sauce pan. In the recipe it says 1.5 lbs of ground turkey. I usually buy the packages of the 93% lean turkey from Costco and they are each about 1.6 or 1.7 pounds and that’s close enough for me. When the turkey is about all browned up, add in the chopped onion and garlic and keep cooking for another 3-4 minutes until the onions start to soften.
Now you just add in the drained black beans, corn, V8 Juice, beef broth, taco seasoning (check out my home made taco seasoning!), and minced cilantro. Bring it to a simmer and let it simmer about 10 minutes or so. The fun thing about taco soup is there are so many fun topping options! I like to put chopped avocado in mine. You could also do crushed tortilla chips, more cilantro, sour cream, cheese, and limes. Go wild. 🙂

- 3 C low sodium V8 juice
- 2 C beef broth
