This is one of my very favorite snacks! It’s so quick and simple but oh so good for you. Packed with protein and healthy fats and carbs, how can you not love a healthy snack that tastes like a treat! For me, almond butter is like frosting. I love it. For a few weeks, Costco was out of almond butter and I was going nuts (no pun intended ;)). I’m sure they got sick of me asking every week when they were getting more in. So when they finally had it again, you better believe I ran right home and made this for snack! Give it a try and you just might eat it everyday for snack like I do some weeks.
Crunchy Berry Almond Yogurt

Serves 1
Ingredients
- 1 C plain greek yogurt
- 1/4 C frozen berry mix (or fresh berries)
- 1/4 t liquid stevia
- 1/4 t cinnamon
- 1/2 t almond extract
- 1 plain rice cake
- 1 T natural almond butter
Instructions
- If using frozen berries, nuke them in the microwave just until they aren't frozen anymore.
- In a bowl mix berries, yogurt, stevia, cinnamon,and almond extract.
- Crumble rice cake on top.
- Slightly warm almond butter so that it's a little runny then drizzle over crumbled rice cake and you are ready to enjoy!
